Pumpkin Bread with Coconut Oil Recipe
Yield: 1 loaf
This perfectly spiced recipe is simple to make in one bowl and is easy to medicate using one jar of CVD Coconut Oil.
1 cup granulated sugar
1/2 cup brown sugar, packed
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
3/4 cup pumpkin puree
1/2 cup melted coconut oil = 1 Jar of CVD Coconut Oil 240mg THC
1/3 cup water
1 teaspoon vanilla extract
Preheat oven to 350F. Grease a 9×5 loaf pan with cooking spray, or line it with parchment paper. Set aside.
Whisk together sugars, flour, spices, baking soda and salt in a large bowl. Create a well in the center of the bowl, and add pumpkin, eggs, coconut oil, water and vanilla into the well. Whisk, starting with the wet ingredients and working your way to the outside of the bowl, mixing until batter is smooth and clump-free.
Pour batter into the loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan until it reaches room temperature. Cover in plastic wrap or store in a sealed container for up to 5 days or pre-slice and place in your freezer.
Pumpkin Bread Dosage Information for 1 recipe using 1 whole jar of Coconut Oil 240mg THC:
Recipe yields 1 loaf
Cut bread into 10 equal slices = 24mg THC per slice
Note: If you want a lower dosage bread, use 1/4 cup medicated coconut oil with 1/4 cup unmedicated coconut oil. Cut bread into 10 equal slices = 12mg THC per slice
Tip: To be sure you get all the medicated coconut oil out of the 4 ounce jar, place jar in pot filled with water (1 inch up the side of the jar) and bring to a low simmer. The coconut oil will become warm and liquid and can easily be dispensed.
