Our CVD Infusion Kitchen is committed to the belief that food is medicine. Making good food choices on a daily basis is one of the most important things we can do to support our health and wellness. The recipes we develop and ingredients we choose to create the medical cannabis products our patients rely on for symptom relief reflect this commitment. At all times, our focus is on the best quality, local and/or organic ingredients available to us. To ensure freshness, we work in small batches to avoid using artificial preservatives, colors or flavors. When it comes to recipes, as with most things in life, we believe the simpler they are, the better. And, of course, the result has to be tasty. The pleasure of eating delicious food is part of the medicine. 

Perhaps the best representation of our food philosophy is our Cheese Nibs. These buttery, flakey crackers are made with just five top-notch ingredients, all of which are local, except for the salt.

Top Quality Local Ingredients

Nitty Gritty Grain Company, Organic All-Purpose Flour: Grown and milled in Charlotte, Vermont! We are very fortunate to have such a wonderful resource so close to home. The Cellars at Jasper Hill Farm, Cabot Clothbound Cheddar Cheese: This award-winning cheese is an excellent example of the collaborative spirit that exists amongst Vermont’s small farmers and craft producers. The milk is sourced from George Kempton’s Farm in Peacham; Cabot Creamery makes the cheese and then it is aged at The Cellars of Jasper Hill in Greensboro, VT. We chose this particular cheddar cheese after undergoing a series of taste tests featuring other well-known and respected cheddars during recipe development. The Cabot Clothbound was the hands-down winner for both flavor and texture. 

Cabot Creamery’s Unsalted Butter: Founded in 1919 in Cabot, VT, as a cooperative of 94 family farms, Cabot Creamery has since expanded to include 800 farm families throughout New England and New York. Cabot is the world’s first dairy co-op to become a certified B-corp. They are committed to environmental sustainability and social policies that provide meaningful benefits to their staff and customers alike. Cabot unsalted butter is our butter of choice in the CVD Infusion Kitchen because it creates quality and value.  

CVD’s Supercritical CO2-extracted Cannabis Extract: The extracts in all of our infused products are created from cannabis grown at our vertically-integrated production facilities in VT. We manage every step of the cultivation cycle and the extraction and refining processes. This ensures that our extracts are free of toxic pesticides or residual solvents. Our Quality Control lab analyzes each extract for cannabinoid content so that our Infusion Kitchen team can formulate with confidence and deliver consistently dosed products. 

Sea Salt: Plain and simple. We like ours coarse in this recipe.

Small Batch & Hand-Crafted

Our current recipe yields 108 boxes of Nibs, and we make them weekly. The dough for our Cheese Nibs is hand-rolled and hand-cut, making for slightly different sizes of each Nib. Because cannabinoids are distributed throughout a recipe based on weight, if the dough was rolled thicker or cut bigger, each Nib will weigh a little more and contain more ∆9- THC. Our target is for each package of Nibs to contain 200mg of ∆9-THC. We do that by making sure that each package’s net weight is 50g. A batch of slightly bigger Nibs will result in fewer Nibs within each package across the batch. On average, each package contains 14-16 Nibs. 

How to Dose our Cheese Nibs

 You can determine the mg content of ∆9-THC in each Nib in your package in two ways.   

1) For an average THC/Nib, divide 200mg by the number of Nibs in your package. If you have 16 Nibs, the average THC content in each is 12.5mgs.   

2)  If you want to get more specific and you have a kitchen scale, weigh each Nib and use the equation below:  

Your Nib weighs 3g. Divide by 50grams and multiply by 200mg = 12mg THC   

We have recently invested in two pieces of equipment that will remove the variation in size and thickness of each Nib. Soon, each package will contain the same number of Cheese Nibs with consistent ∆9-THC in each Nib. Stay Tuned!
